It is called sunomono but sunomono is the name of the variety of vinegar-flavored salad. It is not the specific name of the dish that you described but the name of the type of dish that are often an appetizer or side dish to your entree. Sunomono is commenly made with cucumber or radish. The dish described can be called crab and cucumber sunomono and they will know what you are talking about.
