I eat at a Taste of India chain at my local mall and always get the naan bread which comes with a green sauce. I want to try to make it at home but have no idea what the sauce is?

Raita is a usually yogurt based salad made with vegetables such as cucumbers, tomatoes, radish, red onions, spinach....



The sauce you mention is either mint chutney (pudina ki chutney) or cilantro chutney (dhania ki chutney). It could possible be a combination of both mint and cilantro as well.

Its usually mint sauce prepared fresh by putting some garlic mint leaves,salt to taste some green chillies and u can add abit of raw mango minus the skin.blend it well add some lemon juice or some youghurt. if it is already tangy with the raw mango then do not use the other 2 ingredientsIf u are using yoghurt the n not the lemon juice

Green Curry Masala

Ingredients:

Fresh Coconut - 1 cup

Roasted Sesame seeds (Telugu: Nuvvulu) - 2 tbsp

Onions - 3 tbsp ( or 2 medium ones)

Peanuts - 1 tbsp

Roasted Yellow Bengal Gram (Telugu: Putnala Pappu) - 1 tbsp

Tamarind taste - 1 spoon

Oil - 2 tbsp

Garam Masala - 1 tbsp

Ginger Garlic paste - 3/4 tbsp

Salt - to taste

Red Chilli powder - 1 tbsp

Turmeric - 1/2 tbsp

Soy yogurt - 1 tbsp (optional)



Preparation:

1. Take a tbsp of oil in a pan, on a low flame add in sesame seeds, 3/4 of onions, peanuts, yellow bengal gram, ginger garlic paste and fry these for a 2 mins.

2. Then add tamarind water and finally coconut. cook for a minute.

3. Grind these to a fine paste and keep aside.

4. In a wok, take left over onion, add in the ground masala and cook for couple of minutes. When the oil starts to separate, season with salt, turmeric, red chilli powder and garam masala.

5. Finally, add some yogurt and stir well.

6. You can in your choice of vegetable in Step 4.

7. Goes well with any biryani, naan or roti.



Mint Chutney

Ingredients:

Mint leaves – ½ cup, packed

Onion – ¼ of a medium

Tomato – ½ of a medium

Ginger – ½” piece

Garlic – 1 clove

Green Chili – 1 or to taste

Lemon Juice – ¼ cup

Salt – ½ tsp (or to taste)

Chat Masala – ½ tsp

Sugar – ½ tsp



Method:

1. In a blender, add the following – Onion, Tomato, Ginger, Garlic, Green Chili and Lemon Juice. Grind well.

2. Add in the washed Mint leaves, Salt, Chat Masala and Sugar and grind again till the mixture becomes smooth and everything has blended well.

3. Pour into serving dish.

4. Makes about ½ cup and can be served with pakodas, Puda, chaat….



Tips:

1. Be sure to use only the leaves of the Mint – discard the stalks.

2. When available, add a little bit of raw green mango to the chutney for additional flavor.

3. Store in the refrigerator. Mint Chutney has a shelf life of about 7-10 days.

4. Mint Chutney freezes well also and can be kept for the times when Mint is not readily available.

I am not sure about the place you are talking about , but if it is green it may be mint sauce or palak paneer, a side dish made of spinach and cottage cheese.

it's probably raita, which is a yogurt based sauce flavored with a combination of herbs and veggies (namely cucumber). some of the most common herbs used - cilantro, basil, mint, cumin (can be a combination of some, all, or different ones)



i'd give you a recipe, but there are so many depending on what the main herb is. if you can place the herb, just google raita recipe and find the one that has mostly that herb. if you don't know, go ahead and ask the restaurant what the main herb you 'taste' is. they should tell you. or you can just start experimenting!

Thats mint sauce.

This is the way to make it.

1 Cup Fresh Mint leaves

1 Cup Fresh Cilantro leaves (looks like Parsley but is very different in flavour.....)

1 tbsp- ground garlic

a few serrano pepper (according to taste and desired spiciness)

Salt to taste



Put it all together and just grind it to a fine paste in a food proccesor. When done add 1 or 2 Tbsp of yoghurt and blend well. and Viola you have the mint chutney ready !!



Willa- a "raita" is basically yoghurt thats mixed with a little water to thin it. You add a pinch of 1) salt 2)sugar 3) Red pepper powder 4) Garam Masala and you can add a few spoons of either tomato, or cucumber or onion chopped. It looks white and not grean.



why the thumbs down. LOL !! Most of you are calling it "Raita" or Palak panner. Guys this is my food, i cook it every day. LOL !!!
