Sticky rice is either a Japenese or Hawaiin recipe. Very delicious.

"Sticky rice" is sticky mainly because of the type of rice. I am assuming you tried it in Hawaii. The most common type of sticky rice found in Hawaii is California Rose or Calrose rice. Rice can be cooked in a ratio of 1 cup rice to 1+ cup of water (just add a little bit more water. Bring your rice to a boil on med-high heat(about 8 - 10 minutes). Let it boil for about 3 minutes, then turn burner down to a low heat for about 15 minutes. Turn off heat and let sit for 5 minutes. Or you can buy an automatic rice cooker or steamer. "Fluff" rice (scrape it of the top layers and let the steam escape) and serve.

Sticky Rice

First of all, sticky rice is actually a type of rice - it's not a method of cooking. Sticky rice is sometimes called "sweet" rice or "glutinous" rice.



Unlike the rice we usually eat, which is cooked in water, sticky rice has to be steamed. So you'll need some sort of large steamer in order to cook it.



Take 2 cups sticky rice and put in a mixing bowl. Fill with water and rub the rice vigorously with your hands. The water will turn milky. Drain off the milky water, replace with fresh water, and keep repeating the process until the water runs clear.



Soak the rice in clean water overnight.



When you're ready to cook the rice, drain and place in the steamer. (If the holes in the steamer are too large and the rice might fall through, line it with cheesecloth first.) Fill the pan with water, making sure it doesn't touch the steamer. Steam for about 30 minutes and check it. It might need another 10 minutes or so.



Remove from heat and let stand for 10 minutes.

TO PREPARE RICE: Rinse the rice under cold running water until the water no longer looks milky. Soak in a bowl of water for 1 hour. Drain the rice and place in a saucepan with 2 cups of cold water. Bring to a boil, turn the heat to low, and cover the pan with a tight-fitting lid. Simmer for about 15 minutes, or until the water has been absorbed and the rice is sticky and soft. Keep warm.
