HELP!!!!! I NEDD TO FIND THE NAME TO CHINESE SHRIMP BALL LIKE FOOD WITH WHITE CREAMY SAUCE THAT WAS SWEET PLZ?

i went to a chinese restraunt and my friend order me a meal it was shrimp in like a ball like it was in a pancake type batter and it had white creamy sace that was sweet it was real good and i need help finding out the name please help

The sauce is made with egg whites and condensed milk, shrimp balls with snow cloud sauce , we made it in Singapore at the hotel I was a sous chef in, you can buy pre-made shrimp balls at Asian stores and then batter them.



You can also use batter shrimp as a substitute, the sauce is made with stock and the milk thicken with cornstarch, and the egg white flowered in to make it fluffy, seasoned with chinese cooking wine, white peppers salt and a bit of finely grated garlic and ginger, they add a bit of sugar, you have to use the full fat Carnation milk.

It was probably not in balls but rather batter fried whole shrimp in a dish called walnut shrimp

Crunchy sweet walnuts with crispy prawns--a wonderful combination. Don't let the mayonnaise part throw you off--it is very good.

SERVES 6

1/2 cup walnuts

1/2 cup sugar

2 cups oil

1 lb jumbo shrimp, peeled and deveined

1/2 cup cornstarch

3 egg whites

1/4 cup honey

3 tablespoons mayonnaise

1 tablespoon lemon juice or white vinegar

1 tablespoon sweetened condensed milk

1/2 head shredded cabbage

1.Boil walnuts in 5 cups water for 10 minutes; drain.

2.Place walnuts and 1/2 cup sugar into 2 pints of boiling water. Boil for another 10 minutes.

3.Remove walnuts from water and coat with honey.

4.Heat 2 cups oil until almost smoking, then fry walnuts until they are shiny and brown, about 5-8 minutes.

5.Remove and place on cookie sheet to cool.

6.Mix cornstarch and egg whites together to form a thick, sticky mixture. Mix shrimp into this mixture and set aside.

7.Mix mayonnaise, lemon juice and condensed milk in a medium bowl until smooth.

8.Heat 1/2 cup oil and deep fry shrimp until golden. (Put only a few in at a time or they will stick together).

9.Drain shrimp and then fold into mayonnaise sauce.

10.Serve over the cabbage the sauce is great with it.

I think it's call wan tan. Wan tan is a chinese shrimp ball in a small pancake. You can serve it in a soup. Or you can bake or steam it and then serve with some sauce.
