My uncle is visiting from Kentucky and he keeps saying that I need to eat peanuts more. "Peanuts are a good sauce of protein" he says. "I eat about 3 cups a day, they're a great sauce of protein."
So I'm wonder what is a sauce of protein are there other kinds of sauces from protein and are they like peanut sauces at the Thai Food place?

Source of protein, not sauce. I have news for your uncle. 3 cups a day is NOT good for him! A handful a day is healthy, but 3 cups... no one should eat that amount... and every day??!!! Nuts are very high in fat.. too much isn't good. Either he's not telling the truth or you aren't. It just seems very unlikely anyone would eat 3 cups of peanuts EVERY day! Hell, I couldn't even afford to keep that much on hand. Nuts are not cheap! If he's really eating that much, he's killing himself. Is he a vegetarian? If he doesn't eat meat, nuts are a good source of protein, but in moderation... but it can't JUST be nuts. You don't need to supply him with nuts.

A serving of peanuts is considered 1/4 cup. The recommend amount per day is 1 ounce! Or 1/2 serving of peanut butter. As you will see in the link below, there are 13.9 grams of fat in that 1 ounce. If your uncle has 3 cups a day, I'm guessing he is significantly over weight.

Nuts besides groundnuts/peanuts, almonds, walnut, cashew etc is a good source of Protein but 3 cups of nuts a day is way too much. A handful is good as snack, too much will bring up your uric acid. A great nut sauce besides a great source of protein is PEANUT BUTTER. I like those chunky peanut butter. You can use peanut butter as a dipping sauce by adding thai chili paste with peanut butter to make thai peanut sauce to stir fry noodles (padthai), skewered meat (satay) and several other dishes. You can dip celery, carrot sticks and apples wedges in peanut butter or spread it on your bread as peanut butter sandwich. You can even use peanut butter mixed with hoi sin sauce to make a sauce for your rice paper spring rolls (Vietnamese style). Peanut butter with banana slices in your pancakes, crepes etc. Last but not least make a thick creamy peanut butter soup.*

They are actually legumes. These nuts are a good source of dietary protein compose fine quality amino acids that are essential for growth and development.

also it contains high concentrations of poly-phenolic antioxidants, primarily p-coumaric acid. This compound has been thought to reduce the risk of stomach cancer by limiting the formation of carcinogenic nitrosamines in the stomach.

But in other case Peanut allergy is a type of hypersensitivity response in some people to food substances prepared using these nuts. The resultant over-reaction of the immune system may lead to severe physical symptoms like vomiting, pain abdomen , and finally death. hence we must be careful to avoid any food preparations that contain peanut products in these kind of individuals.

Also due to its fat content Peanuts are one of the crops that are susceptible to toxic fungal infection, especially by aflatoxin . Aflatoxin is a very powerful and dangerous known carcinogen that may cause liver cirrhosis and cancer. therefore "Roasting" helps to reduce the toxin levels in these nuts and thus offers some protection against aflatoxin.

therefore you should be careful enough for selecting those food.
