Some Indian cookbooks are so complicated they scare me off....

Actually, why do you need to buy a book when you can get so many more authetic recipes online, written by Indians from India and all over the world.

My indian friend's dad swears by this website and the ease of the recipes when he's out on business trips and his wife isn't there to cook her famous Indian dishes for him.

I think you would like the book Indian Home Cooking by Suvir Saran, who teaches Indian cooking classes and opened the New York restaurants Amma & Devi.Saran's approach to cooking Indian cuisine is at once contemporary and traditional. The recipes are not very complicated, tested, and work well straight from the book. Take a look at the books of Madhur Jaffrey as well as she has some nice approaches to communicating the complexities of Indian cooking without making it seem over complicated.
