How to make Curry Stew?

I was recently at a Restaurant in Sterling Heights, Michigan called Sahara Med Restaurant.
They had this DELICIOUS Curry Stew. It was yellow/orange, spicy and had chunks of potatoes.
I really want to know an authentic recipe.

Curry is not a specific spice, or even a specific spice mixture, but is a generic term: a thousand cooks may have a thousand different ways of making it, but it will all be called curry.



A simple approach: ask to speak with the cook at that restaurant. You might be surprised at the response. Many good cooks will happily share their base recipes, but do not be surprised if you find you cannot exactly duplicate their efforts as the spices used would have to be the same.



Also note that cooks have a secret: they know WHEN you add each spice makes a difference, as well as how much you use.

Tricky one here. The Indians don't actually have anything called "curry stew", and your restraint sounds like it thinks it's north African. You could try alu bartha, or looking up Moroccan recipes.
