there's a simple one which uses a ready made sauce and the others are more specific in that they're divided into the varieties you'd find in india such as vindaloo and korma. you don't mention if the people you want to please are experts or 'foreign' to curries. try searching for beef rendang if you want something different.

You can make Japanese beef curry. It's very simple , cheap and easy to make. You just buy one premade Japanese curry paste. It looks like a chocolate bar. In a pot boil water, add your cubed beef pieces and then add in the curry paste. Give it a stir to dissolve the curry mix paste and let it stew till the beef is soft then add in some carrots. Cook well. Done. Do not season, the curry paste is already season. If mixture too thick in consistency. Just add water to dilute"

This is a recipe for an Indian style Beef Madras Curry. I serve this Madras Curry with the following condiments: small bowls of peanuts, raisins, flaked coconut, sliced bananas and chutney (store bought).

Madras Curry (Indian Recipe)

Ingredients :

2 tablespoons olive oil

1kg (about 2 lbs.) chuck steak, cut into 2.5 cm ( 1 inch) cubes

2 tablespoons tomato paste

1 cup beef stock

steamed basmati rice, raita and mint leaves, to serve

For the Madras Curry Paste : Note: You can buy Madras curry paste but making your own is better.

2 tablespoons ground coriander

1 tablespoon ground cumin

1 teaspoon turmeric

1/2 teaspoon freshly ground black pepper

1 teaspoon Chili powder (optional)

2 garlic cloves, crushed

2 teaspoons grated ginger

2 1/2 tablespoons lemon juice

Combined the Curry Paste ingredients together in a bowl and set aside to add to the browned beef.

Directions

Heat 1 tablespoon of oil in a large saucepan over high heat. Add half the beef. Cook, stirring, for 2 to 3 minutes, or until browned. Transfer to a bowl.

Repeat with remaining oil and beef. Reduce heat to medium. Add spice paste. Cook for 1 minute. Return beef to saucepan. Cook, stirring, for 1 minute, or until meat is coated with paste.

Add tomato paste and stock. Bring to the boil. Reduce heat to low.

Cover and cook for 1 hour 15 minutes, or until beef is tender.

Cook, uncovered, for a further 15 minutes, or until sauce has reduced and thickened slightly.

Serve with rice and raita. Top with mint leaves.
