I used a yucca root to make a centerpiece for a banquet table at church yesterday and got to thinking...(I know, hard to believe...), How do you eat a yucca root? Do you boil it, fry it, sautee it? I have never seen anyone eat one. I did lick it while it was raw, really yuck (hence the "yucca"?)!

My favorite thing to do is peel the yucca, cut it down the middle, so that it's in 2 pieces. There is a core in the middle, make sure you get it out, it's tough and unedible. (stick the point of your knife into the yucca and lift up, the core runs the whole length of the yucca. It's thin and fiberous. Next, cut it into chunks or strips. Boil the yucca till it is very soft. Almost soft enough to mash, then heat oil and fry the yucca, and salt it. It's so good. Also you can just boil it up and put it in soups like you would a potato.

Yuccas area tubar root vegatable and can be used any way you would use a potato. Look on the interent for some recipes. Make sure you peel it first. As it is starchy, make sure you have plenty of liquid when boiling or steaming it.

Brazilian flour mandioca comes from the sweet yucca. It, the yucca or cassava, is used in breads, puddings, cakes, and a wonderful dish my family makes called farofa. Unbelievably delicious. It is used as a thickener. Cassava/yucca/mandioca can be boiled with lemon garlic and olive oil, served like mashed potatoes, stuffed with meat puerto rican pasteles- also delicious. It is used in tapioca pudding.

You don't know what you're missing.

A yucca root can be prepared many ways. You must first peel it. Then you can slice it thinly and fry it, or you could cut it up in chunks then boil them and mash them. They are used alot in Latin and Jamaican food. There really good once there cooked.
